Happy Monday!

Today I found my new favorite granola recipe. Thanks to Mark Bittman! I love it because he has seemed to come up with foolproof way of  keeping granola from burning (which...because of the honey...seems to be a little tricky ) Anyway I tried to find this recipe online so that I could share it with you readers (hi mom!) and it seems his cooking technique...which is what I loved about the recipe...is different online than it is in the book. So because I know you aren't all going to rush out and buy the book (though you probably should) I've explained the recipe after the jump because it's just that cool.

I'm also posting some links to some of my favorite recipes so far. I'm new to cooking and I'm having so much fun so I thought I'd share.

The SLC Junior League's Banana Oat Bran Pancakes

Ina Garten's Lemon Chicken Breast

Gina's Baked Macaroni and Cheese

enjoy and happy cooking this week!

Mark Bittman's Crunchy Granola

so basically all he does is take a 9x13 baking dish and puts it on two burners and sets them at low-med heat. cooks the oats (stirring frequently) for two minutes, adds whatever nuts (we like almonds), cooks 2 more minutes, adds the coconut (we love coconut) cook for 2 more minutes and then mixes in whatever spices you want and honey. Then he bakes it all at 300 for 20 minutes (and stirs two different times). after you can add whatever dried fruits. (I didn't have any but it was still tasty). easy peasy.
